This coffee is produced by smallholder growers working closely with local exporter and processor Cofincaf. The company serves as an aggregator across the Chiapas communities of Chilón, Sitalá, Simojovel, Sabanilla, Yajalón, and Ocosingo, working with a network of more than 3,000 coffee producers.Chiapas, located in southern Mexico, is the country's leading coffee-producing region, accounting for approximately 41% of Mexico's total Arabica coffee production. More than 180,000 families cultivate coffee across 88 municipalities, with approximately 61% of the region's coffee producers belonging to Indigenous communities. The region's combination of high elevations, fertile volcanic soils, and diverse microclimates creates ideal conditions for producing high-quality Arabica coffees.
This coffee keeps things simple and soft, moving from gentle citrus sweetness into nutty, cocoa-driven depth as the roast progresses. At light roasts, honey and citrus lead with a straightforward walnut character underneath, keeping the cup clean and easy from the start. Moving into medium, the honey shifts toward a light caramel, with toasted walnut rounding things out. Into medium-dark, an essence of sweet cinnamon bread and toffee bring warmth, with roasted walnut, caramel, and a hint of dark chocolate giving the cup a silky, rounded character. By dark, brown sugar and praline settle into a rounder cocoa powder character, giving the coffee its fullest, most rounded expression. Across every roast level, this coffee stays simple and approachable, with a soft, easy-drinking character throughout.
