Tolima is renowned for producing high-quality coffee, recognized globally for its exceptional flavors and unique character. It is one of Colombia's key coffee-growing areas, benefiting from ideal climatic conditions, rich volcanic soils, and a commitment to sustainable and traditional farming methods. Most coffee farms in Tolima are small-scale and family-owned, emphasizing traditional and sustainable farming. Tolima's coffee is considered among the best in Colombia, often competing with Huila and Nariño for top honors. This region has been historically affected by conflict, but in recent years peace initiatives have allowed growth and investment in coffee production. This lot has been decaffeinated using the sugarcane or ethyl acetate process, which is a naturally occurring compound found in molasses. This decaf is everything you want it to be: smooth, balanced, and full of flavor. At light roast, it offers notes of orange, vanilla, and honey, with a body that really carries the cup. The medium roast balances the citrus with deeper caramel-like sweetness, shortbread cookie, and a hint of citrus acidity. In the medium-dark profile, the citrus moves to the background, letting rich molasses shortbread flavors shine while still keeping a touch of brightness. The dark roast is creamy and comforting, with notes of molasses, vanilla, and cocoa. Overall, it’s an approachable and satisfying decaf from start to finish.
