      Café Sierra Azul is a small cooperative in Chiapas, Mexico within the El Triunfo Biosphere Reserve—home to the largest evergreen cloud forest in Mesoamerica and the largest remaining tropical rainforest on the Mexican Pacific coast. Sierra Azul is a relatively new cooperative founded in 2010 by young people in the community who had grown up in coffee and were looking for opportunities to create sustainable livelihoods in Chiapas rather than immigrate to the United States. In fact, one producer that the Bellwether team met, immigrated to Utah and worked as a farmer before returning to his community to produce coffee. The vast majority of the 300 members are young people and women who are able to access better markets and financing as well as technical assistance and social projects through the cooperative.

      Our latest offering, Mexico Sierra Azul, evokes a plethora of sensory expressions that will leave you in awe. Abundant in texture and flavor, one could find themselves compelled to describe this coffee as exquisite. In lighter registers, we found this coffee to possess a sweet and tangy brightness, reminiscent of passionfruit, dried mango and honeycomb. Pair that with a well-balanced round body, that truly makes for a remarkable cup. If darker roast styles are more your taste, we’ve got you covered. We found darker iterations of this coffee to be silky, sweet and viscous, much like a nice dark chocolate, maple syrup and fresh clove. We’ve extracted this coffee in a myriad of ways and the Sierra Azul makes an absolutely show stealing shot of espresso. Lighter interpretations of this coffee make for a top notch drip coffee as well.
