      Café Sierra Azul is a cooperative in Chiapas, Mexico, within the El Triunfo Biosphere Reserve — home to the largest evergreen cloud forest in Mesoamerica and the largest remaining tropical rainforest on the Mexican Pacific coast. This lot is women-produced. Sierra Azul is a relatively new cooperative founded in 2010 by young people in the community who had grown up in coffee and were looking for opportunities to create sustainable livelihoods in Chiapas rather than immigrate to the United States. In fact, one producer that the Bellwether team met immigrated to Utah and worked as a farmer before returning to his community to produce coffee. The vast majority of the 300 members are young people and women who are able to access better markets and financing as well as technical assistance and social projects through the cooperative.

      This coffee was grown using organic practices by certified organic producers at origin.

      Returning for another season, this crowd favorite Mexico Sierra Azul lot is easy-drinking and full of character. At lighter roasts, it opens with tangerine and raw sugar sweetness, layered with maple and a light, playful body. Moving into medium, the sweetness rounds into a creme brulee-like essence, with a soft tangerine note that balances out the cup nicely. At medium-dark, notes of creme brulee, toasted walnut, dark chocolate, and citrus peel are richly balanced. At a dark roast, the coffee turns more heavy-bodied, with dark chocolate, roasted marshmallow, and a hint of orange zest rounding out the finish. No matter how you roast it, this coffee aims to be approachable, reliable, and versatile.
