Café Sierra Azul is a cooperative in Chiapas, Mexico, within the El Triunfo Biosphere Reserve, home to the largest evergreen cloud forest in Mesoamerica and the largest remaining tropical rainforest on the Mexican Pacific coast. This lot is women-produced. Sierra Azul is a relatively new cooperative founded in 2010 by young people in the community who had grown up in coffee and were looking for opportunities to create sustainable livelihoods in Chiapas rather than immigrate to the United States. In fact, one producer that the Bellwether team met immigrated to Utah and worked as a farmer before returning to his community to produce coffee. The vast majority of the 300 members are young people and women who are able to access better markets and financing as well as technical assistance and social projects through the cooperative. This lot was decaffeinated using the Sugar Cane EA process, which uses ethyl acetate derived from fermented sugar cane, along with water and heat, to naturally remove caffeine while preserving the coffee's original character.\u003cbr\u003e\u003cbr\u003eThis crowd-favorite Mexico Sierra Azul is now available decaffeinated — easy-drinking and full of character, just without the caffeine. At lighter roasts, it opens with fresh orange and raw sugar sweetness, layered with toffee and a light, playful body. Moving into a medium roast, this coffee showcases notes of candied orange, warming spices, caramel, and dark chocolate, bringing balance and depth to the cup. At medium-dark, the spices turn heavy, leading with cinnamon and nutmeg, with a lingering citrus note alongside sweet toffee and bittersweet chocolate. At a dark roast, the coffee turns more heavy-bodied, with bittersweet chocolate, dark toffee, and a hint of warming spice rounding out the finish.
